1.5 lbs. baby potatoes
1 tsp salt
2 tbsp chopped fresh parsley
1 scallion, chopped
Add the potatoes to a pot & cover with water. Add the salt, and bring the pot of water to a boil over high heat. Cook until tender, for 8-10 minutes
Drain the potatoes in a colander and let them cool until they are still warm but not steamy
Roughly cut the potatoes in half, toss with ½ pouch of Herby Yuzu Aioli and chopped herbs and salt to taste
