Enjoy this delicious blend of sweet, salty, and herby flavors! This quick recipe combines Medjool dates, blue cheese, and crispy bacon coated in Herby Chimichurri-infused honey for a quick & easy appetizer or snack.
Slightly freeze the bacon before slicing it. This makes it easier to cut, ensuring nice, even strips and beautifully cooked bacon.
2 cups pitted Medjool dates
8 oz. blue cheese
4 slices thick-cut bacon
¼ cup honey
Preheat the oven to 375°F. Arrange bacon slices on a parchment-lined sheet tray. In a small bowl, whisk together the honey and Herby Chimichurri. Brush the herby honey onto the bacon slices. Bake until bacon is cooked through, about 20 minutes.
Meanwhile, stuff about a teaspoon of blue cheese into each date and arrange stuffed dates on a platter.
Remove bacon from the oven and let it cool and crisp slightly. Chop bacon and sprinkle over dates. Serve.
