Herby Mushrooms Pasta

Mushrooms and Herby Chimichurri tossed in pasta is the perfect weeknight dinner on the fly.

Chef Tip: Don't overcrowd the pan with mushrooms, otherwise the mushrooms will steam instead of brown. If necessary, cook them in batches.




In a large saute pan, melt the butter. When butter is foamy, add mushrooms and season with salt and pepper. Cook until mushrooms are just starting to brown. Add ½ pouch Herby Chimichurri and cook for another 5 minutes.


Meanwhile, cook pasta according to package instructions. Drain, reserving 1 cup pasta water.


Add drained pasta to skillet with mushrooms and toss to coat. Add pasta water as needed to make a creamy sauce. Serve with parmesan cheese.
