Hearty Lasagna Soup

Ingredients

  • 2 tablespoons olive oil

  • 1 pound ground beef

  • 1 pound ground Italian sausage

  • 1 clove garlic, minced

  • 1 yellow onion, chopped

  • 1 bunch basil

  • 4 cups vegetable or chicken stock

  • 1 pouch Haven’s Kitchen Red Pepper Romesco

  • 9 lasagna noodles, broken into pieces and cooked to package instructions

  • 2 cups fresh spinach

  • 10 oz. ricotta cheese

  • 1 cup shredded mozzarella

  • ½ cup grated parmesan

  • Salt and pepper

Steps

STEP 1

Heat olive oil in a large Dutch oven. Brown ground beef and sausage in batches and set meat aside in a large bowl.

STEP 2

Add garlic and onions and sauté until onions are translucent, about 10 minutes. Add stock and Red Pepper Romesco and bring to a boil.

STEP 3

Season with salt and pepper and add basil leaves. Let simmer for 10 minutes.

STEP 4

While the soup is simmering, make the ricotta topping by combining ricotta, mozzarella, parmesan, salt, and pepper in a large bowl. Set aside in the refrigerator.

STEP 5

Add lasagna noodles to the soup, along with the spinach. Let the spinach wilt and serve with ricotta topping.
