Herby Roasted Chicken & Potatoes with Sunshine Chili Aioli

This combo of potatoes, chicken, and herbs is super easy to throw together and will surely be a weeknight favorite! Finish your plate with a squeeze of Sunshine Chili Aioli.

Chef Tip: For extra crispy goodness, preheat your oven for at least 15 minutes. We like to use an oven thermometer to ensure the temperature is accurate!




Preheat your oven to 400°F. In a cast iron skillet, nestle the chicken into the potatoes and drizzle with olive oil or Herby Chimichurri. Cook until potatoes are heated all the way through and crisping around the edges


Once the chicken is out of the oven, add more Chimichurri and spread it on the chicken with the back of a spoon. Serve drizzled with Sunshine Chili Aioli
