Golden Grilled Chicken and Peaches

There's something about this dish that reminds us of a sunset in the 1970's...Maybe it's the grilled peaches that conjure memories of an old-school, pantry staple called Saucy Susan. Maybe it's the golden colors and the way they all blend together. Whatever it is, it just works.

Chef Tip: Make sure your grill is HOT and clean and don't try rotating the chicken until it easily releases. You can also roast the chicken in a 400°F oven, skip the peaches and serve the golden drumsticks over rice or roast potatoes.



Step 1

Preheat the grill to medium-high, while your chicken tempers

Step 2

Pat the drumsticks dry and season with salt. Then grill, flipping every 5 minutes or so, until the chicken is cooked through and crispy, about 30 minutes

Step 3

Meanwhile, halve and pit the peaches. Then toss with a drizzle of olive oil and a pinch of salt

Step 4

When the chicken is cooked, remove it from the grill and add the peaches and onions, cut side down. Cook them for 3 minutes until they have a nice char, then flip and cook for another 2 minutes. The peaches should be super juicy and soft. The onions should be softened and starting to crisp around the edges

Step 5

While the peaches and onions are grilling, toss the chicken with about ½ pouch of Golden Tahini.

Step 6

Take peaches and onions off the grill, toss with basil, a pinch of salt and a dash olive oil. Arrange the chicken with the peaches and onions on a platter, garnish with mint or basil
