Sunshine Couscous Pilaf

A broth of our Golden Turmeric Tahini sauce turns plain couscous into a starring side dish.

Chef Tip: Toasting couscous is a small extra step that goes a long way by adding an extra nutty flavor to the grain.

Ingredients

  • Olive oil

  • 1-2 cloves garlic, minced

  • 1 ½ cups pearl couscous

  • Haven’s Kitchen Golden Turmeric Tahini

  • 1 ¾ cups vegetable broth

  • Salt

  • 1 bunch parsley finely chopped

  • 1 lemon sliced

  • 1 cup, toasted cashew nuts

Steps

Step 1

Turn on the Instant Pot to the 'Sauté' function and allow it about 30 seconds to warm up.

Step 2

Add a glug of oil in the pot, then add the minced garlic and sauté until fragrant, about 30 seconds.

Step 3

Add the pearl couscous directly to the garlic and stir continuously for about 1 minute to toast the couscous.

Step 4

Squeeze in ½ a pouch of the Golden Turmeric Tahini and continue to sauté for another minute or so.

Step 5

Add the vegetable broth and press CANCEL. Place the lid on the Instant Pot and set the valve to 'SEALING.' Pressure cook on HIGH pressure for 3 minutes. It will take a few minutes for the pot to come to pressure.

Step 6

Once the 3 minutes are up, perform a natural release for 5 minutes, Then, flip the valve to 'VENTING' to release any remaining pressure. Turn and remove the lid.

Step 7

Top the couscous with chopped parsley, sliced lemon, and toasted cashews. Serve immediately!
