We teamed up with our friends at Jovial Foods to make the most delicious Autumnal Orzo salad! Squash, dried cranberries, and walnuts with our Golden Turmeric Tahini are the perfect combination of nutty, sweet, and savory. Make this dish as a side for a dinner party or simply have it on hand for your busy week!
Chef Tip: To rehydrate your dried cranberries, simply soak them in warm water.
2 acorn squash, cut into bite sized chunks
Olive oil
Salt
1 box Jovial Cassava Orzo, cooked as per package instructions
2 cups baby arugula
¼ cup dried cranberries, rehydrated in hot water
½ cup toasted walnuts, chopped
½ cup feta, crumbled
Preheat your oven to 400F
In a large bowl, toss the squash with olive oil and salt
Place the squash on a parchment-lined baking sheet tray and roast until the squash is tender but is beginning to caramelize
In the meanwhile, toss the orzo with ½ a pouch of the Turmeric Tahini and dress your greens with olive oil and salt
To assemble the platter, serve the orzo and top it with the roasted squash, dressed greens, cranberries, walnuts, and feta. Squeeze some more Turmeric Tahini and serve immediately
